It features an 11cm blade, ideal for filleting small fish like sea bass, and its flexibility enhances this capability. The knife can also function as a small carving knife, living up to its 'utility' name. A fluted version is available as the GS-36. This Global Classic GS-11 utility knife is crafted from Cromova18 Stainless Steel with a Rockwell C56-58 hardness and an acute 15-degree cutting edge. It requires handwashing and was designed by Komin Yamada in Japan. The GS Series is a classic collection of small and medium-sized knives manufactured by Yoshikin in Niigata, Japan, using exclusive CROMOVA 18 high carbon stainless steel. They feature a superior razor-sharp edge ground steeply to a point on an acute angle, holding a sharper edge for longer. The precisely balanced hollow sand-filled handle offers smooth contours and seamless construction, eliminating food or dirt traps for ultimate safety and hygiene. The knives exhibit excellent stain resistance and edge retention. Please note: Knives are not for sale to persons under the age of 18. All knives and bladed products are delivered by Age Verified Delivery (AVD). The carrier may request proof of age upon delivery. If proof of age is not available or the recipient is underage, the carrier will refuse to deliver.
