Thyme (Thymus vulgaris) is a popular herb known for its lovely, strong aroma and small, green leaves with a tasty, sweet earthy flavor. It's an excellent companion to many dishes, including game, fish, pork, and lamb. This herb is easy to grow and has a strong flavor, best used in meat and vegetable dishes, either fresh or dried. Sow seeds indoors from February to May, 0.5cm deep in moist compost, and cover with polythene in a warm place (13-16°C). Remove polythene once germination starts. Transplant seedlings into bigger pots when strong enough. For outdoor sowing, plant seeds directly into the growing bed from May to June, 1.5cm deep, keeping the soil moist. Thyme prefers a sunny location. Harvest leaves as required. Row width should be 9" / 23cm.
